We will need 1 teaspoon canola oil, 1 medium onion which needs to be finely chopped, 1 garlic clove which should be properly minced, 1 cup of dried lentils which need to be finely rinsed, 1 tablespoon chili powder, 2 teaspoons dried oregano, 2½ cups of vegetable or reduced-sodium chicken broth, one cup of salsa, 12 taco shells, 1½ cups of shredded lettuce, one cup of chopped fresh tomatoes, 1½ cups of shredded reduced-fat cheddar cheese and 6 tablespoons of fat-free sour cream. Add these items to your shopping list.

Cooking Direction :

Now comes the major part, cooking. At first, take a large nonstick skillet. Heat the oil over medium heat. Then sauté onion and garlic until tender. Then you need to add lentils and seasonings. After that cook and stir it for 1 minute. Then stir in broth and bring to a boil. After that reduce heat, simmer and cover it. Let it be like that for 25-30 minutes until lentils are tendered. After that uncover it and cook for 6-8 minutes until the mixture is thickened and stir it occasionally. Then mash the lentils a bit, stir it in salsa and heat through. Serving Your cooking is done.

Now serve in taco shells. Decorate the top with remaining ingredients. You can make 6 servings. Now enjoy the new taste!
