Coconut banana muffins
Does anyone here love bananas? How about coconut? Coincidentally, I am a big fan of these two fruits. I don’t know why but coconut flakes give me goosebumps. That melting taste, that finesse. Mmm. I just can’t describe the part of it. I buy bunches of bananas every week. One day I started to think, “Why don’t I try to make a combination of these two?” Well, at first, I was confused about how to do it. And then, one day, the idea came to my mind. I thought, “Hey, why don’t I make some muffins with it?” So I went on with my experience, and the result came out outstanding. Here I will tell you how I did that. To make coconut banana muffins, you will need:
Ingredients :
• 1¼ cups all-purpose flour
*• 1 tsp. of baking powder
• ¼tsp. salt
*• 2 very ripe and mashed bananas
• 3 cup shredded coconut
*• ½ cup of unsalted and melted butter
*• 2 cups of sugar
• 1 egg
*• ½ tsp. vanilla
• Muffin tin with 8 (½ cup) muffin cups
• Paper liners
Preparation :
With any baking, you have to start with preheating your oven. But you probably know that. So do it and set the temperature to 375 degrees. Don’t forget to line your muffin tin with paper liners. And now the hardest part, the mixing! Hahaha. Take a medium-sized bowl and pour the flour, baking powder, and salt. Then whisk it together for some time and set aside. Then take another bowl and pour bananas, butter, sugar, egg, and vanilla. Whisk it even more so that the batter becomes too softened. Now fold in the flour mixture until the flour gets moistened. And now it’s time to fold in the cup of shredded coconut. Now pour the batter into the muffin cup and sprinkle the remaining coconut on top. Now bake for 20-22 minutes and voila!
