Recipe breakfast muffins healthy
An individual-sized, baked quick bread meal is named as a muffin. Muffins are similar to cupcakes in size and cooking methods. The main difference between cupcakes and muffins is cakes are sweet always, but muffins can be cornmeal and cheese, delicious as blueberry, chocolate chip, or even in banana flavor. This meal is delicious in taste. There are lots of people who are taking this as a dessert. There are various types of muffins. We’ll show you the easy one today for your breakfast or takeaway meal.
For cooking breakfast muffins, you will undoubtedly need some items. You will need two large eggs, 150ml pot natural low-fat yogurt, 50 ml rapeseed oil, 100g apple sauce or pureed apples, one ripe banana which needs to be mashed, four tablespoons of clear honey, one teaspoon of vanilla extract, 200g wholemeal flour, 50g rolled oats, plus extra for sprinkling, 1½ teaspoon baking powder, 1½ teaspoon of bicarbonate of soda, 1½ teaspoon of cinnamon, 100g blueberry, two tablespoons of mixed seed, you can use pumpkin, sunflower, and flaxseed as mix seed.
Baking the Muffin:
For baking the muffin at first, you need to prepare the oven. Heat the oven to 160°C to 180°C with fan/gas 4. Line a 12 hole muffin tin with 12 large muffin cases. Now take a jug and mix the eggs, yogurt, oil, apple sauce, banana, honey, vanilla. Tip the remaining ingredients into a large bowl and a pinch of salt. After that, mix all of them to combine.
When all that is done, now pour the wet ingredients and mix briefly until you have a smooth batter, point to be noted that you should not over mix as this will make the muffins dense. Divide the batter between the cases. Sprinkle the muffins with the extra oats and the seeds. After that, you need to bake the muffin for 25-30 minutes until when a skewer inserted into the center of a muffin comes out clean.
Then remove from the oven, transfer to a wire rack and leave to cool. You can store it in a sealed container for up to 3 days.
